||De-stemmed, cold soaked, open top fermentation, punch down, 100% Malolactic fermentation
The Cabernet Franc was hand sorted then gently de-stemmed. Once de-stemmed it was placed in open top bins then cold soaked for 3 days. Fermented in open top bins and punch down by hand twice a day. The wine was then pressed off skins then racked to French barrels (30% new oak). The barrels were racked clean and the wine was bottled unfined and unfiltered.
