||Stainless steel and barrel fermentation
The Sauvignon Blanc was hand sorted then whole cluster pressed. The juice was cold settled then racked to a stainless steel tank. This Sauvignon Blanc was fermented at 60°F for 4 weeks in tank. The wine was racked to neutral barrels and then aged in barrel on lees, Sur lie for 3 months. The wine was racked out of barrel and into tank to be fined, cold stablized and filtered before bottling.
