The Sauvignon Blanc was hand sorted then whole cluster pressed. The juice was cold settled then racked to a stainless steel tank where it slowly fermented at 52°F for 4 weeks. The wine was aged on lees, Sur lie for 7 months. The wine was fined, cold stablized and filtered before bottling.
