||De-stemmed, cold soaked, open top fermentation, punch down, 100% Malolactic fermentation
The Cabernet Sauvignon lots were all hand sorted then de-stemmed and cold soaked for 5 days. Fermented in closed top fermentors and pumped over twice a day. The wine was then pressed off skins then racked to French barrels (30% new oak). After aging for 22 months in barrel, the four lots of Cabernet Sauvignon are racked together and blended for bottling. The wine was then fined racked clean, filtered and bottled.
