||De-stemmed, cold soaked, open top fermentation, punch down, 100% Malolactic fermentation
The Syrah was hand sorted then de-stemmed and cold soaked for 3 days. Fermentation in open top bins and punched down by hand twice a day. The wine was then pressed off skins then racked to French barrels (35% new oak). The barrels were aged for 2 years then racked clean and the wine was filtered and bottled.
